  • 500 grams (4 cups) All-purpose flour
  • 9 g ( tsp) Salt
  • 240 ml (1 cups) Warm milk ((about 110°F or 45°C))
  • 100 g (2 large) Eggs (lightly beaten)
  • 60 g ( cups) Granulated sugar
  • 7 g ( tsp) Active dry yeast ((1 standard packet))
  • 113 g (½ cups) Unsalted butter (room temperature)

Filling

  • 1 cup (240 g) Lotus Biscoff spread
  • ½ cup (16 g) crushed Lotus Biscoff cookies

Glaze

  • ½ cup (120 g) Lotus Biscoff spread (melted)
  • ¼ cup (8 g) crushed Lotus Biscoff cookies

  • Dry ingredients – Add flour and salt to the large bowl of a stand mixer with the hook attachment.
    500 grams All-purpose flour, 9 g Salt
  • Yeast mixture – In another bowl, combine the warm milk, sugar, yeast, and eggs. Mix well.
    240 ml Warm milk, 60 g Granulated sugar, 100 g Eggs, 7 g Active dry yeast
  • Combine – Then, gradually pour the yeast mixture into the flour mixture, mixing constantly until you get a sticky dough.
  • Butter – Knead the dough for 5 to 6 minutes. Then, add the soft butter and continue to knead for 5 to 6 minutes until you have a smooth, elastic dough.
    113 g Unsalted butter
  • Rise – Place the dough in a greased bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm place for about 1 to 1½ hours or until doubled in size.
  • Roll – Once the dough has risen, punch it down and turn it onto a floured surface. Roll it out into a rectangle approximately 18 x 12 inches.
  • Filling – Spread the Lotus Biscoff spread evenly over the dough, leaving about a 1/2-inch border on all sides. Sprinkle the crushed Lotus Biscoff cookies over the spread. Start at one of the longer edges and tightly roll the dough into a log.
