Gumpaste Cabbage Rose Tutorial David Austin Rose
This gumpaste cabbage rose aka David Austin rose makes a perfect show stopper to any cake just on its own. This simple and easy gumpaste cabbage rose tutorial will show you how to make this gorgeous sugar flower in full bloom. The Cabbage Rose is called such because of all the numerous petals that are needed to create this large full bloom flower resembling a Cabbage. These were developed in the 17th and 18th century by the Dutch and you will find them often in paintings by the Dutch Masters such as Renoir and Van Gogh.
These have gained a lot of popularity over the years because of their bouncy full bloom appearance especially for weddings and events of the rich. They are quite expensive and considered very exquisite.
A little about cabbage rose aka David Austin rose
Do you know that the David Austin is just a popular variety of the Cabbage Rose? Yes! I read that it’s referred to the Gucci brand of Garden Roses so much that it has become the synonym-om for the Cabbage Rose; mostly in the Sugar Community.
I love making these flowers despite that they really do take a while to complete. When I just started making them they felt like forever but after a few times now; they are so easy I love making them. Quite often you make one large Cabbage Rose for a cake and that’s all it takes to get a wow factor. You can make a simple naked cake with just one Cabbage Rose. It really has an amazing effect.
On this cake, I have used a spray with some sweet peas and filler blossoms and while they are four cabbage roses on it.. you can see it gives the cake such a full bloom look.
Tools you will need:
- 26 g florist wire (white or green)
- Nile Green Florist Tape
- Gumpaste Foam Pad
- Ball Tool
- Rose Petal Cutters
- Five Petal Cutters
- Six Petal Cutters Sets
- Gum pate wire cutter
- Needle Nose Pliers
- Gum Paste Rolling Pin
- Mini Spatula
- Gum paste drying rack
- Gel Colors – Turquoise and Neon Purple OR
- Petal Dust
Preparing Gumpaste
- Color your gum paste.
- For roses I often start with a darker shade and add white as I continue on for the outer petals.
- I often make my flowers in white and color them once I know what colors I need for the Cake.
- You can use your favorite gum paste recipe. Home made or store bought.

- If you live in a location where you deal with high heat and humidity this gum paste recipe is ideal

Ah, thanks for bringing it to my attention. I just fixed it. I think it should work now.
I clicked on some of the tools recommended for this tutorial and one of the rose petal cutters links to pair of ear buds instead of the actual rose cutter. Just thought you may want to know!
